We always have an eye out for local oysters, and we’re really excited to introduce a favorite from the Great Peconic Bay – Peconic Golds!
The first thing we noticed about these little treasures was the reddish-gold color of the shells, which comes from the unique mix of nutrients and minerals in the Bay. The meat is sweet and creamy, with a distinctive mineral finish. They also have well defined shells and deep cups, which is a testament to the regular tumbling that Matt Ketcham and the crew give them, and makes shucking a breeze!
